DAY OF THE DEAD BREAD a tasty sweet bread that kids love, especially with hot cocoa. Ingredients: 1 teaspoon dry yeast 1/4 cup lukewarm milk 4 cups all-purpose plain flour 6 eggs 1teaspoon anise seeds 1pinch salt 1/2 cup butter melted 1/4 teaspoon orange-flavor egg wash (1 egg white plus 1/2 egg yolk) powdered sugar Preperations: 1. combine the yeast with the water and 1/3 cup of the flour and let stand until the mixture doubles in volume. 2. place the remaining flour in a large bowl. make a well (indentation) in the center and place the eggs, salt, sugar, aniseed, butter, and orange-flavor in the well. beat together, then add the yeast mixture (step 1), combining it with the dough. knead on a floured board for 15 minutes or until the dough no longer sticks to the surface. 3. place the dough in a greased bowl. cover with a cloth and let rise in a warm draft-free area for 1 1/2 hours or until doubled in volume. 4. preheat the oven to 450Fdegrees. pinch off about 1/3 of the dough and form into a 2-inch ball. shape the ball in a long rope. mold pieces of the rope to resemble little bones. set aside. 5. shape the remaining dough into a round loaf and brush with egg wash. place the ball of dough in the center of the loaf and arrange the bread bones in a circular pattern around the ball. brush with the remaining egg wash. let the dough rise for 30 minutes.
6. bake for 10 minutes in the hot oven. lower the temperature of the oven to 350Fdegrees and continue baking for 20-30 minutes. 7. remove from oven and sprinkle with sugar, let cool and serve at room temperature with hot cocoa. copyright© 2002 Bardo.com
